The only way I see this happening is some kind of children's book or similar product where the poetry is not the main focus.

What's your definition of a 'collection of poetry' ?

Does it need a preface from some literary scholar of some kind ?

Would a collection of sexy limericks count ?

@Odoacre that's why I included a major publishing house and gave it 2 more years. If a collection of Ai generated sexy poems is published, then why not? I don't want to exclude much right from the onset, in the spirit of the question
